Sweet Potato Pizza
The essentials
Ingredients
- 1 medium sweet potato (approx 200g)
- 25g oats
- 10g coconut flour (we love the Groovy Company)
- 1/2 tsp salt
- Egg white of 1 egg
- 3 tomatoes
- 1 small onion
- 25g cheese (your choice of cheese type!)

Method
Pre-heat the oven to 180°. Cover the sweet potato in a piece of tin foil and leave to bake for 1 hour. Remove the potato and it will be extra soft and extra sweet.
Let the potato cool for half an hour (or just make it the night before and pop it in the fridge) and take the skin off the potato, which will fall off very easily.
Pre-heat the oven to 200°.
Place all of the dry ingredients into a bowl and add in the sweet potato, combining all of the ingredients until you reach a doughy texture. Add in the egg white and continue to mix until all ingredients are combined.
Place a piece of baking paper onto a flat baking tray and put the dough into the centre. Spread the dough within the baking tray to make approx a 14 inch wide circle. Make sure the dough doesn’t spread too thinly, as it will burn.
Place another piece of baking paper on top of the flat circular base and pop this into the oven for 30 minutes, or until the base is brown underneath.
Put 2 tomatoes into a food processor or nutribullet and mix up until fully blended. This is your tomato sauce, so then spread it evenly onto your base leaving a half inch border where you can see the base.
Put any of your desired toppings onto the pizza, and then pop it back into the oven for 5-10 minutes until the cheese is melted!
A little bit extra
Ok, so this isn’t the quickest recipe we have ever shared with you! But you can combine the first part with your dinner one evening – bake an extra sweet potato and then pop it in the fridge for when you’re ready to start your pizza dough.
This is a great pre or post workout meal, as it contains some great slow release energy carbs: sweet potato and oats.
