Sponge Pudding

 

The essentials

Ingredients

140ml Rude Health drink

2 Vanilla pods

200g Ground almonds

70g Coconut flour

3 tsp Baking powder

Pinch of salt

70g coconut butter

150ml Maple syrup

1 tbsp Boiling water

Serves 8

 

Method

Preheat the oven to 180°.

Slice vanilla pod and scrape the seeds into the milk. Place in the fridge to chill overnight.

Sift together the dry ingredients.

Whisk together the wet ingredients.

Gently combine the wet ingredients into the dry ingredients.

Place the mixture evenly into greased (with a little bit of coconut butter) ramekins.

Place into the oven for 20 minutes, or until golden brown.

 

A little bit extra

This is a great vegan, gluten free, dairy free and refined sugar free alternative to the golden syrup filled sponge puddings we are used to buying from the supermarkets! It is lovely served with some fruit to liven the dish up with some freshness. Drizzle a little maple syrup over your finished product to add some decoration if serving to guests.
