Salmon Parcels
The essentials
Ingredients
- 4 pieces of salmon (approx 90g each)
- Handful of baby/ cherry tomatoes
- Handful of olives
- 2 Leeks
- 1 Red pepper
- Handful of fresh basil
- Salt and pepper
Serves 4 people
Method
Preheat the oven to 180°
Use some tin foil to make a parcel shape and place the salmon inside.
Roughly chop up the tomatoes, olives, leeks and peppers and put inside the parcel.
Rip up some basil and place inside the parcel. Grind some salt and pepper to taste.
Place in the oven for 12 minutes.

This is one of the easiest things you can make! Pop it in the oven while you go for a shower, or get ready for work and there you have the quickest, healthiest takeaway lunch ever!
