Salmon and Avocado Wrap

 

The essentials

 

Ingredients

  • 3 eggs
  • 100g smoked salmon
  • 1 avocado
  • 1/2 tsp coconut oil
  • Salt and pepper
    Serves 1-2

 

Method

Whisk eggs and pinch of salt and pepper with a fork until completely blended.
Heat a pan on medium heat on the hob and add the coconut oil. Pour 1/2 the egg mix into the pan to make one wrap. Cook until golden underneath and then flip over to cook on the other side. Once done remove from the pan and add the other half of the egg mix to the pan and cook until golden again.
Add 1/2 the salmon and 1/2 the avocado to each wrap, fold up and enjoy!

This simple meal is just a different way of eating scrambled eggs, salmon and avocado – we’ve just spiced it up a bit! It’s an easy grab ‘n’ go breakfast that isn’t full of sugar – it’s totally sugar free!!

Eggs are full of protein and good fats which make you feel fuller for longer. They are great to have for breakfast as they will fill you up and give you more energy than cereals or breakfast bars.
