One Pan Dish
The essentials
Ingredients
- 1 red pepper
- 2 eggs
- 1 tbsp coconut oil
- Three mushrooms, chopped into small cubes
- 1/2 white onion, chopped into small cubes
- Splash of apple cider vinegar
- Large handful of spinach
- 2 large tomatoes, chopped into small cubes
- Salt and pepper to taste
Serves 1
Method
Cut the red pepper in half width ways and cut out 2 rings.
Fry the coconut oil in a pan on a moderate heat, placing the two rings in the pan.
After about a minute, turn the rings over to fry the other side. Place 1 egg inside each ring. Then, place all of the other ingredients around the rings and wait for the eggs to cook through.
Keep all ingredients in the pan on a moderate heat and allow the eggs to cook through. This takes approximately 7 minutes.

This is a great breakfast dish, combining all of the greats: protein, healthy fats and carbs! You’ll get a good dose of protein and fats from your egg, fats from your coconut oil and carbs from your veggies.
The red pepper adds a sweet twist to the meal and contains lots of Vitamins C and E. Vitamin E plays a key role in helping to keep skin and hair youthful and strong.
