Mushroom Burgers
The essentials:
Ingredients:
- 4 portobello mushrooms
- 1 tin of kidney beans
- 1 egg
- 1 handful of mint/tarragon/herb of choice
- Salt and pepper
Serves 4 (8 small-medium burgers)
Method:
Preheat the oven to 180°.
Boil the kidney beans in a pan until soft. Drain and mash up.
Chop the mushrooms into 1cm pieces and mix with the kidney beans, egg and herbs and season with salt and pepper.
Shape into patties and place on a tray lined with grease proof paper.
Place in the oven for 20-25 minutes.
